About this experience
World renowned and award-winning Chef Rick Stein owns a stunning cookery school in Padstow, Cornwall, and you’re invited to join his chefs for a one-day seafood cookery course. You’ll be situated in a breath-taking location with views of the harbour and the estuary – a perfect place to learn how to cook seafood.
Your day will be full of demonstrations, hands-on cooking, plenty of food tasting and complimentary wine along with fresh coffee and tea. You’ll break for lunch, served with wine, overlooking the Camel Estuary and further out to Rock. You can take home a folder containing useful tips along with recipes and meal ideas.
With a range of themes to choose from, including classes without fish or seafood, you’ll be spoilt for choice as to which lesson to take. Whichever class you pick, it’s sure to be an unforgettable way to elevate your culinary skills to new heights!

What happens on the day?
On arrival at the cookery school you will be offered refreshments as you meet the rest of your class, and your chefs for the day. You will be handed Chef’s whites and an apron and will get going with your first activity. The day includes lots of tasting, sampling and demonstrations. You will take part in four practical lessons, taken over the course of the day with a break for a delicious lunch in the afternoon, served with wine.
Tea, coffee and water will be available throughout the day and you will receive a folder with recipes, skills and techniques covered on the course, making it easy for you to recreate the dishes again at home.

Fish and Shellfish
One of our most popular courses, for those who've never cooked with fish or for seafood enthusiasts alike, this course teaches you the techniques you'll need to create impressive fish dishes. Using the freshest fish available, the head chefs will show you how to choose good fish and how to make the very best of it in the kitchen. You will be using the freshest seafood to recreate Rick’s infamous seafood dishes. Dishes may include - grilled scallops in the shell with toasted hazelnut & coriander butter, mackerel recheado with kachumber salad, and bouillabaisse.
Far Eastern Cookery
Southeast Asian cooking is a glorious assault on the senses and it seems so healthy. This course demonstrates the combinations of hot, sour, salty and sweet, the occasional bitter notes and emphasis on colour and texture. Quite simply, it is food of considerable sophistication, delivered in seconds. Dishes may include – beef rendang, Singapore chilli crab, and crisp fried sea bass with a tomato, chilli and kaffir lime leaf sauce.
Secret France
A celebration of Rick’s exploration of hidden parts of France’s culinary landscape, from Dieppe down to Cassis. With our knowledgeable and amiable chefs, you’ll discover how to cook five of Rick’s favourite dishes from the trip. Dishes may include - poached lobster risotto, chicken fricassée with morels, and seafood gratin with caramelised apples.

- Please note that this experience is taught and run by experienced Chefs who have all been trained within Rick’s restaurants and at Rick Stein’s Cookery School. Rick Stein will not be present during the experience
- There is no guarantee of an allergy-free environment as a variety of courses are run in the school
- The experience content, equipment used and restrictions may vary
Availability
The experience runs throughout the year on selected days. Your voucher is not valid on Saturdays. The courses run from 09.00 to 16.00 and you are asked to arrive at 08.45 for registration.

We recommend you book at least eight weeks in advance to ensure that dates are available. All bookings are subject to availability.
Please allow approximately 7 hours 30 minutes for the whole experience.
What about insurance?
The centres contracted with us hold public liability insurance. We also hold contingency liability cover. You will not be liable for accidental damage to equipment, except where damage has been caused as a result of recklessness or wilful negligence.
