Overview
Spend a day in the only Italian cookery school in central London – La Cucina Caldesi. Here you can enjoy learning about the cuisine of one of the best-loved parts of Italy with A Day in Amalfi Cookery Class. This beautiful region of Italy is home to some delicious dishes and you will learn all about them with expert tuition from Giancarlo Caldesi, who started the cookery school with his wife in 2005.
Giancarlo will introduce the menu, ingredients and techniques that you will be using. Everything you will need will be provided for you, so you can get stuck in and cook some stunning meals. You will learn to cook an array of recipes such as fresh pasta with clams, pizette, baked fish, seasonal vegetables, plus fabulous desserts such as gelato. Afterwards, you can sit down and dine on your delicious creations accompanied by a glass of specially selected regional wine.

What happens on the day?
When you arrive at La Cucina Caldesi cookery school you will be warmly welcomed and treated to coffee, tea and homemade biscotti before your class begins. You will meet your teacher, Giancarlo Caldesi, who will introduce you to the recipes you will be preparing during the day.
You will cook a variety of dishes and get to enjoy them over lunch with a glass of wine. Don’t be afraid to ask questions throughout the day to ensure you make the most of your experienced tutor’s knowledge.

We recommend you book at least eight weeks in advance to ensure that dates are available. All bookings are subject to availability.
Please allow approximately 6 hours for the whole experience.
What about insurance?
The centres contracted with us hold public liability insurance. We also hold contingency liability cover. You will not be liable for accidental damage to equipment, except where damage has been caused as a result of recklessness or wilful negligence.

Great day. Informative and fun.
Under Covid, this was an excellent day. a\Stefano was a good host and chef. We learned to cook a number of dishes over the day, vegetarian, pasta, fish and chicken. All delicious. More food than you can eat, but take away boxes provided. I bought ingredients and cooked some of them a couple of days later!!

100% . Brilliant day. Loved every moment. Stephano is brilliant. Fabulous mix of tutelage, hands on, and downtime. Could not have asked for a more enjoyable or educative day. A great mixed crowd of 14 people. All keen and friendly. Would highly highly recommend.

What a fabulous chef
Stefano Borella taught 14 of us to serve up some excellent food from Amalfi region. Made our own pasta, lemon chicken, fabulous rum baba and real home made custard with cream. Can't wait to get the recipes so I can cook it all at home. Learned some useful tips and chopped countless vegetables, all very yummy. No ordinary stuff here! Wonderful flavours. Our group were friendly and lovely.

Amazing Amalfi
The Day in Amalfi cooking course at Cucina Caldesi was fantastic. Chef Caldesi is clearly a very talented man however his personality, patience and passion were so wonderful and I learnt a lot from him - both in terms of cooking and a way to live my life. The food we learnt to make was absolutely scrumptious - I cannot wait to make it again - and I left the day feeling fulfilled... and full! I have recommended it to everyone who listened to me and I am looking forward to attending another course.

Great fun and informative
The Chef, Stefano, was great. He put you at ease the minute you arrived. The atmosphere was very causal and relaxed. Learnt some great cooking techniques that can be put to easy use with other recipes. Plenty of wine and plenty of food! Well worth it.

A lovely day spent with my daughter
My daughter received this from her husband for Christmas so I joined her. We had a lovely day with Stefano our tutor and we were shown and contributed to the making of a variety of dishes including ravioli, chicken cacciatore, sea bream and rum baba. We sat around a table together and ate the delicious food with some wine to enhance the meal. A thoroughly enjoyable day.

Fun and filling but room for improvement
The day was good and we learned some new recipes. Giancarlo is a big personality, cares passionately about teaching, and works hard to include everyone - some more willingly than others. And by the end of the day we all consumed about 3 days' worth of food so the price is very good indeed in that regard. Points to improve were that it felt a little unorganised and unprepared at times -equipment not available, ran short of an ingredient; and also sometimes it felt more like we were watching the chef cook the dishes rather than cooking ourselves. This is because there is only 2 hobs and ovens rather than everyone having their own mini kitchen. All in all an enjoyable day and we left with a major food coma!
